  • 2 lbs beef chuck or stew meat cubed
  • 2 large onions chopped
  • 3 cloves garlic minced
  • 2 tbsp sweet paprika
  • 2 cups diced tomatoes
  • 1 large bell pepper chopped
  • 2 medium carrots sliced
  • 3 medium potatoes cubed
  • 4 cups beef broth
  • 2 leaves bay leaves
  • salt and black pepper to taste

Instructions
 

  • Heat a large pot over medium heat and add some oil. Sear the beef cubes until browned on all sides, then remove and set aside.
  • In the same pot, sauté the onions until golden brown. Add the minced garlic and cook for another minute.
  • Stir in the paprika, diced tomatoes, and beef broth. Return the beef to the pot and bring to a simmer.
  • Add the bell peppers, carrots, and potatoes. Stir well to combine.
  • Cover the pot and let it simmer on low heat for 1.5 to 2 hours, stirring occasionally.
  • Season with salt and black pepper to taste. Remove bay leaves before serving.
  • Serve hot with crusty bread or traditional dumplings.

Notes

For added depth of flavor, you can add a pinch of caraway seeds or a dash of smoked paprika. Goulash tastes even better the next day as the flavors meld together.
