Instructions
Pat the shrimp dry with a paper towel to remove excess moisture.
Set up a breading station with three bowls: one with cornstarch or flour, one with beaten eggs, and one with panko breadcrumbs.
Dip each shrimp into the flour, then the egg, and finally coat with panko breadcrumbs.
Heat oil in a frying pan or deep fryer to 350°F (175°C).
Fry the shrimp in small batches for 2-3 minutes or until golden brown. Do not overcrowd the pan.
Remove the shrimp and let them drain on a paper towel.
In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and garlic powder to make the Bang Bang Sauce.
Toss the fried shrimp in the Bang Bang Sauce until evenly coated.
Serve immediately, garnished with chopped scallions or sesame seeds if desired.
Notes
For a healthier version, bake the shrimp at 400°F (200°C) for 12-15 minutes or air-fry at 375°F (190°C) for 6-8 minutes.
