Bruschetta Pasta Ingredients

  • 250 grams pasta (penne, fusilli, or farfalle)
  • 2 cups cherry tomatoes halved
  • 3 tablespoons extra virgin olive oil
  • 1/2 cup fresh basil chopped
  • 2 garlic cloves minced
  • 1/4 cup Parmesan cheese (optional) grated
  • Salt and pepper to taste

Instructions
 

  • Boil the pasta according to the package instructions. Add a pinch of salt to the water, then drain and set aside.
  • In a large bowl, combine the halved cherry tomatoes, minced garlic, chopped basil, olive oil, salt, and pepper. Let the mixture sit for 10 minutes to marinate.
  • Toss the cooked pasta into the tomato mixture and mix well until everything is evenly coated.
  • Top with freshly grated Parmesan cheese (if using) and serve immediately. Enjoy!

Notes

This dish is best served fresh, but you can store leftovers in an airtight container for up to 3 days. For a protein boost, add grilled chicken or shrimp.
