Salad Base

  • 4 cups kale chopped
  • 2 cups green cabbage shredded
  • 1/4 cup roasted almonds sliced or slivered

Vinaigrette Dressing

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Remove kale stems and chop the leaves into bite-sized pieces. Add shredded green cabbage to a large bowl.
  • Massage the kale with a bit of olive oil for 1-2 minutes to soften its texture and reduce bitterness.
  • In a small bowl, whisk together apple cider vinegar, Dijon mustard, honey, salt, pepper, and the remaining olive oil.
  • Pour the dressing over the kale and cabbage, then toss everything until well coated.
