Ingredients
  

Mac and Cheese

  • 2 cups elbow pasta cooked al dente
  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup sharp cheddar cheese freshly grated
  • 1/2 cup Romano cheese grated
  • 1/4 cup Parmesan cheese grated

Instructions
 

  • Cook the elbow pasta in salted boiling water until al dente. Drain and set aside.
  • In a saucepan over medium heat, melt the butter. Stir in the flour to create a roux, cooking for 1-2 minutes.
  • Gradually whisk in the milk and heavy cream, stirring constantly to prevent lumps. Let it simmer until it thickens.
  • Lower the heat and add the cheddar, Romano, and Parmesan cheese. Stir until melted and smooth.
  • Season with salt and black pepper to taste.
  • Combine the cooked pasta with the cheese sauce, mixing well to coat.
  • Transfer the mixture to a baking dish, sprinkle extra cheese on top, and bake at 375°F (190°C) for 15-20 minutes until golden and bubbly.

Notes

For an extra crispy top, broil for the last 2 minutes of baking. You can also add a breadcrumb topping for extra crunch!
