Instructions
Cook the elbow pasta in salted boiling water until al dente. Drain and set aside.
In a saucepan over medium heat, melt the butter. Stir in the flour to create a roux, cooking for 1-2 minutes.
Gradually whisk in the milk and heavy cream, stirring constantly to prevent lumps. Let it simmer until it thickens.
Lower the heat and add the cheddar, Romano, and Parmesan cheese. Stir until melted and smooth.
Season with salt and black pepper to taste.
Combine the cooked pasta with the cheese sauce, mixing well to coat.
Transfer the mixture to a baking dish, sprinkle extra cheese on top, and bake at 375°F (190°C) for 15-20 minutes until golden and bubbly.
Notes
For an extra crispy top, broil for the last 2 minutes of baking. You can also add a breadcrumb topping for extra crunch!
