Main Ingredients

  • 500 g chicken (thighs or breasts)
  • 1 medium head green cabbage (shredded)
  • 2 medium carrots (sliced)
  • 2 celery stalks (chopped)
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 2 tbsp olive oil
  • salt to taste
  • pepper to taste
  • bay leaves optional
  • thyme or parsley for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onions, garlic, celery, and carrots. Sauté for about 5 minutes until softened.
  • Add the chicken pieces and cook until they are no longer pink on the outside.
  • Pour in the chicken broth and bring to a boil.
  • Reduce heat to a simmer and add the shredded cabbage. Stir well to combine.
  • Let the soup simmer for 25-30 minutes, until the vegetables are tender and the flavors meld together.
  • Season with salt, pepper, and optional bay leaves or thyme. Stir well.
  • Remove from heat, garnish with fresh parsley, and serve hot.

Notes

For an extra flavor boost, add a splash of lemon juice or a dash of soy sauce before serving. The soup tastes even better the next day!
