Instructions
Heat olive oil in a large pot over medium heat. Add onions, garlic, celery, and carrots. Sauté for about 5 minutes until softened.
Add the chicken pieces and cook until they are no longer pink on the outside.
Pour in the chicken broth and bring to a boil.
Reduce heat to a simmer and add the shredded cabbage. Stir well to combine.
Let the soup simmer for 25-30 minutes, until the vegetables are tender and the flavors meld together.
Season with salt, pepper, and optional bay leaves or thyme. Stir well.
Remove from heat, garnish with fresh parsley, and serve hot.
Notes
For an extra flavor boost, add a splash of lemon juice or a dash of soy sauce before serving. The soup tastes even better the next day!
