Ingredients
  

Marinade

  • 2 lbs sirloin steak or flank steak
  • 2 tbsp adobo sauce
  • 2 tbsp ancho chile powder
  • 2 tbsp olive oil
  • 1 tsp oregano preferably Mexican oregano
  • 3 cloves garlic minced
  • salt & pepper to taste

Instructions
 

  • In a blender or food processor, combine adobo sauce, ancho chile powder, olive oil, oregano, garlic, salt, and pepper. Blend until smooth.
  • Place the steak in a zip-top bag or shallow dish and pour the marinade over it. Coat well, then refrigerate for at least 30 minutes, preferably overnight.
  • Before cooking, allow the steak to rest at room temperature for 20-30 minutes.
  • Heat a grill or cast-iron skillet over high heat. Cook the steak for 4-5 minutes per side for medium-rare, adjusting as needed for desired doneness.
  • Let the steak rest for 5-10 minutes before slicing against the grain. Serve and enjoy!

Notes

For an authentic Chipotle-style experience, pair with cilantro-lime rice, black beans, and guacamole. Leftovers make great tacos or burrito bowls!
