Instructions
Blend the cottage cheese until completely smooth in a blender or food processor.
Melt the dark chocolate using a double boiler or microwave in 30-second intervals.
Add the melted chocolate, cocoa powder, honey, vanilla extract, and salt to the blended cottage cheese.
Blend again until the mixture is silky smooth.
Transfer the mousse into serving glasses or bowls.
Refrigerate for at least 1 hour before serving to allow flavors to meld.
Garnish with fresh berries, whipped cream, or shaved chocolate before serving.
Notes
For a vegan option, replace cottage cheese with blended silken tofu. Adjust sweetness to taste.
