Ingredients
  

Soup Base

  • 4 cups fresh broccoli chopped into florets
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tbsp butter
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Optional Additions

  • 1 cup shredded cheddar cheese for extra creaminess
  • 1 tsp nutmeg for extra depth

Instructions
 

  • Heat butter in a saucepan over medium heat. Add chopped onions and garlic, sauté until fragrant.
  • Add broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes until broccoli is tender.
  • Blend the soup until smooth using an immersion blender or a regular blender in batches.
  • Stir in heavy cream and season with salt, pepper, and nutmeg. Simmer for 5 more minutes.
  • Optionally, stir in shredded cheddar cheese for extra creaminess before serving.
  • Serve hot, garnished with extra cheese, croutons, or fresh herbs.

Notes

For a dairy-free version, replace heavy cream with coconut milk or cashew cream. To make it keto-friendly, use full-fat cheese and avoid flour-based thickeners.
