Ingredients

Main Ingredients

  • 4-6 pieces chicken thighs or breasts
  • 1 can cream of mushroom soup 10.5 oz
  • 1 can cream of chicken soup 10.5 oz
  • 1 cup white rice uncooked
  • 2 cups chicken broth
  • 1 packet onion soup mix
  • 1 cup water
  • salt and pepper to taste

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a 9×13-inch baking dish, spread the uncooked rice evenly across the bottom.
  • In a separate bowl, mix the cream of mushroom soup, cream of chicken soup, chicken broth, and water until smooth. Pour over the rice.
  • Place the chicken pieces on top of the rice and sauce mixture. Sprinkle the onion soup mix over the chicken. Season with salt and pepper.
  • Cover tightly with aluminum foil and bake for 1 hour and 15 minutes. Do not lift the foil while cooking.
  • Remove from the oven and let it rest for 5-10 minutes before serving. The rice should be fluffy, and the chicken should be tender.

Notes

For a healthier option, use brown rice and low-sodium soups. To add more flavor, mix in sautéed mushrooms or sprinkle shredded cheese during the last 10 minutes of baking.
