Ingredients
  

Meatloaf Base

  • 1.5 lbs ground beef (80/20 blend)
  • 1/2 cup breadcrumbs or keto alternative (almond flour, crushed pork rinds)
  • 2 eggs lightly beaten
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Caramelized Onions

  • 2 large onions thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp Worcestershire sauce for deglazing

Toppings

  • 1 cup Gruyère cheese or Swiss, shredded

Instructions
 

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Heat a skillet over medium-low heat and add butter and olive oil.
  • Add sliced onions and cook slowly for 25-30 minutes until caramelized.
  • Deglaze with Worcestershire sauce, stirring to release browned bits. Set aside.
  • In a large mixing bowl, combine ground beef, breadcrumbs, eggs, Worcestershire sauce, salt, pepper, garlic powder, and half of the caramelized onions.
  • Mix gently until combined. Do not overwork the meat.
  • Shape the meat mixture into a loaf and place on the prepared baking sheet.
  • Bake uncovered for 45 minutes.
  • Remove from oven and top with shredded cheese.
  • Return to the oven for 5-10 minutes until the cheese is melted and bubbly.
  • Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

For a keto-friendly version, use crushed pork rinds or almond flour instead of breadcrumbs.
