Instructions
Season chicken breasts with salt and pepper.
Heat butter and olive oil in a large skillet over medium heat.
Sear chicken breasts for 4-5 minutes per side until golden brown and cooked through. Remove and let rest before slicing.
In the same skillet, add minced garlic and cook until fragrant.
Pour in chicken broth and heavy cream, stirring to combine. Simmer for a few minutes.
Whisk in grated parmesan cheese until smooth. Season with salt and pepper.
Cook pasta according to package instructions. Reserve ½ cup of pasta water before draining.
Add cooked pasta and sliced chicken to the sauce, tossing to coat. Add reserved pasta water if needed to adjust consistency.
Garnish with parsley and serve immediately.
Notes
For a dairy-free version, use coconut milk and nutritional yeast instead of heavy cream and parmesan. Add red pepper flakes for a spicy kick.
