Ingredients
  

Chicken

  • 2 pieces chicken breast

Sauce

  • 4-5 cloves garlic minced
  • 1 cup parmesan cheese grated
  • 1.5 cups heavy cream
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 0.5 cup chicken broth
  • salt and pepper to taste

Pasta

  • 12 oz pasta your choice (penne, fettuccine, spaghetti)
  • parsley for garnish

Instructions
 

  • Season chicken breasts with salt and pepper.
  • Heat butter and olive oil in a large skillet over medium heat.
  • Sear chicken breasts for 4-5 minutes per side until golden brown and cooked through. Remove and let rest before slicing.
  • In the same skillet, add minced garlic and cook until fragrant.
  • Pour in chicken broth and heavy cream, stirring to combine. Simmer for a few minutes.
  • Whisk in grated parmesan cheese until smooth. Season with salt and pepper.
  • Cook pasta according to package instructions. Reserve ½ cup of pasta water before draining.
  • Add cooked pasta and sliced chicken to the sauce, tossing to coat. Add reserved pasta water if needed to adjust consistency.
  • Garnish with parsley and serve immediately.

Notes

For a dairy-free version, use coconut milk and nutritional yeast instead of heavy cream and parmesan. Add red pepper flakes for a spicy kick.
