Ingredients
  

Base

  • 4 cups gluten-free bread cubes sturdy gluten-free bread recommended
  • 2 cups milk or nut milk for dairy-free option

Filling

  • 10 large eggs
  • 1 pound cooked sausage gluten-free
  • 2 cups shredded cheese cheddar or mozzarella, or dairy-free alternative
  • 2 cups chopped vegetables bell peppers, onions, spinach, mushrooms, etc.
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a baking dish.
  • Spread gluten-free bread cubes evenly in the baking dish.
  • In a bowl, whisk together eggs, milk, salt, and pepper.
  • Layer cooked sausage, vegetables, and cheese over the bread.
  • Pour the egg mixture evenly over everything.
  • Bake for 30 minutes covered with foil, then uncover and bake for another 15 minutes until golden brown.
  • Let cool for 10 minutes before slicing and serving.

Notes

Feel free to customize with different vegetables, dairy-free cheese, or vegan protein options! Leftovers can be refrigerated for up to 4 days or frozen for up to 2 months.
