Main Ingredients

  • 2 cups dried beans or canned beans, drained
  • 1/2 cup tomato sauce
  • 1 onion diced
  • 1 bell pepper chopped
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp oregano
  • cilantro optional, for garnish
  • 2 cups water or broth

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onions, garlic, and bell pepper. Sauté until softened.
  • Stir in tomato sauce, cumin, and oregano. Cook for 2 minutes.
  • Add beans and water or broth. Simmer for 20-30 minutes until flavors meld together.
  • Garnish with cilantro and serve over rice.

Notes

For a creamier texture, mash some of the beans into the sauce while cooking. You can also add a pinch of chili flakes for extra heat!
