  • 1 pound ground beef (80/20)
  • 1 cup long-grain white rice uncooked
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can cream of mushroom soup 10.5 oz
  • 2 cups beef or chicken broth
  • 1.5 cups cheddar cheese shredded
  • 2 tbsp butter
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a casserole dish.
  • Heat a large skillet over medium heat. Melt butter and sauté chopped onion until translucent (about 2-3 minutes).
  • Add minced garlic and cook for another minute until fragrant.
  • Add ground beef and cook until browned, breaking it apart. Drain excess grease.
  • Stir in cream of mushroom soup, broth, and uncooked rice. Mix well.
  • Season with salt and pepper to taste.
  • Transfer mixture to the greased casserole dish and spread evenly.
  • Sprinkle shredded cheddar cheese on top.
  • Bake uncovered for 25-30 minutes, until rice is tender and cheese is bubbling. Broil for an additional 2-3 minutes for a crispier top if desired.
  • Let the casserole sit for 5 minutes before serving. Enjoy!

Notes

For a healthier version, use lean ground turkey, brown rice, or low-fat cheese. Add extra veggies like bell peppers or peas for a nutrient boost.
