Ingredients
  

Tortillas

  • 2 whole-grain tortillas

Filling

  • 2 eggs scrambled
  • 1/4 cup black beans cooked
  • 1/4 cup bell peppers diced
  • 1/4 cup spinach chopped
  • 1/4 cup shredded cheese cheddar or mozzarella

Toppings

  • 1/4 avocado sliced
  • 2 tbsp Greek yogurt as a sour cream substitute
  • 2 tbsp salsa

Instructions
 

  • Heat a non-stick pan over medium heat and scramble the eggs until fully cooked. Set aside.
  • In the same pan, sauté the bell peppers and spinach for 2-3 minutes until softened.
  • Warm the tortillas in a dry pan for 30 seconds on each side.
  • Lay each tortilla flat and layer scrambled eggs, black beans, sautéed veggies, shredded cheese, and avocado slices.
  • Top with Greek yogurt and salsa, then roll the burrito tightly.
  • Serve immediately or wrap in foil for later.

Notes

For a vegan option, replace eggs with scrambled tofu and use dairy-free cheese and yogurt.
