Instructions
Heat a non-stick pan over medium heat and scramble the eggs until fully cooked. Set aside.
In the same pan, sauté the bell peppers and spinach for 2-3 minutes until softened.
Warm the tortillas in a dry pan for 30 seconds on each side.
Lay each tortilla flat and layer scrambled eggs, black beans, sautéed veggies, shredded cheese, and avocado slices.
Top with Greek yogurt and salsa, then roll the burrito tightly.
Serve immediately or wrap in foil for later.
Notes
For a vegan option, replace eggs with scrambled tofu and use dairy-free cheese and yogurt.
