  • 4 pieces chicken breast boneless, skinless
  • 1 cup cottage cheese blended until smooth
  • 3 cloves garlic minced
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • 1/2 tsp black pepper adjust to taste
  • 1/2 tsp salt adjust to taste

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper.
  • Sear the chicken for 3-4 minutes on each side until golden brown, then remove from the pan.
  • In the same pan, sauté minced garlic until fragrant, about 30 seconds.
  • Lower the heat and add the blended cottage cheese, chicken broth, and Italian seasoning. Stir until well combined.
  • Return the chicken to the pan, spooning some sauce over the top. Transfer the pan to the preheated oven.
  • Bake for 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Remove from the oven, let rest for 5 minutes, then serve with fresh herbs or a sprinkle of parmesan if desired.

Notes

For a richer sauce, you can mix a tablespoon of Greek yogurt with the cottage cheese. Serve over pasta, rice, or with roasted vegetables.
