Instructions
Preheat your oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper.
Sear the chicken for 3-4 minutes on each side until golden brown, then remove from the pan.
In the same pan, sauté minced garlic until fragrant, about 30 seconds.
Lower the heat and add the blended cottage cheese, chicken broth, and Italian seasoning. Stir until well combined.
Return the chicken to the pan, spooning some sauce over the top. Transfer the pan to the preheated oven.
Bake for 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Remove from the oven, let rest for 5 minutes, then serve with fresh herbs or a sprinkle of parmesan if desired.
Notes
For a richer sauce, you can mix a tablespoon of Greek yogurt with the cottage cheese. Serve over pasta, rice, or with roasted vegetables.
