Ingredients

  • 1 lb ground beef
  • 1 medium onion diced
  • 4 large potatoes thinly sliced
  • 1 can cream of mushroom soup 10.5 oz
  • 1 cup cheddar cheese shredded
  • 2 cups mixed vegetables frozen or fresh
  • salt & pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a casserole dish.
  • Brown the ground beef in a skillet over medium heat. Season with salt and pepper. Drain excess fat.
  • Layer the ground beef in the bottom of the greased casserole dish.
  • Sprinkle diced onions and mixed vegetables over the beef.
  • Arrange the sliced potatoes in an even layer on top.
  • Spread the cream of mushroom soup evenly over the potatoes.
  • Sprinkle shredded cheddar cheese on top.
  • Bake for 45-50 minutes, until the potatoes are tender and the top is golden brown.
  • Let cool for 10 minutes before serving.
