Instructions
Preheat oven to 375°F (190°C). Grease a casserole dish.
Brown the ground beef in a skillet over medium heat. Season with salt and pepper. Drain excess fat.
Layer the ground beef in the bottom of the greased casserole dish.
Sprinkle diced onions and mixed vegetables over the beef.
Arrange the sliced potatoes in an even layer on top.
Spread the cream of mushroom soup evenly over the potatoes.
Sprinkle shredded cheddar cheese on top.
Bake for 45-50 minutes, until the potatoes are tender and the top is golden brown.
Let cool for 10 minutes before serving.
