Instructions
Melt 2 tablespoons of butter in a skillet over medium heat.
Season the rockfish fillets with salt and pepper on both sides.
Place the fillets skin-side down in the skillet. Cook for 3-4 minutes, then flip and cook for another 2-3 minutes.
Add the minced garlic and remaining butter to the skillet. Squeeze in the lemon juice and let it simmer for 1 minute.
Remove from heat, garnish with parsley, and serve immediately.
Notes
For extra flavor, try adding a pinch of paprika or cayenne pepper to the fillets before cooking.
