Instructions
Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, beat the eggs. Add melted butter (or oil), vanilla extract, and chopped mandarin oranges.
Slowly mix the wet ingredients into the dry ingredients until just combined. Do not overmix.
Pour the batter into the prepared cake pan and smooth the top.
Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
If using frosting, beat the heavy whipping cream, powdered sugar, and vanilla extract together until stiff peaks form. Spread over the cooled cake.
Notes
For extra citrus flavor, add a splash of orange juice or zest to the batter. Store leftovers in an airtight container for up to 5 days.
