Ingredients
  

Cake Batter

  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 eggs room temperature
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter or oil melted
  • 1 tsp vanilla extract
  • 1 cup mandarin oranges fresh or canned, drained and chopped

Optional Frosting

  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, beat the eggs. Add melted butter (or oil), vanilla extract, and chopped mandarin oranges.
  • Slowly mix the wet ingredients into the dry ingredients until just combined. Do not overmix.
  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • If using frosting, beat the heavy whipping cream, powdered sugar, and vanilla extract together until stiff peaks form. Spread over the cooled cake.

Notes

For extra citrus flavor, add a splash of orange juice or zest to the batter. Store leftovers in an airtight container for up to 5 days.
