Ingredients
  

Chicken

  • 2 pieces boneless, skinless chicken breasts
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 lime juiced

Vegetables & Salad Base

  • 1 cup cherry tomatoes halved
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1/2 red onion thinly sliced
  • 1 avocado sliced
  • 1/2 cup cilantro chopped

Dressing

  • 1/2 cup Greek yogurt or sour cream
  • 1 tbsp lime juice

Instructions
 

  • Marinate the chicken by mixing cumin, paprika, chili powder, garlic powder, olive oil, and lime juice. Let sit for 30 minutes.
  • Grill or roast the chicken at 375°F (190°C) for 20-25 minutes until cooked through.
  • Let the chicken rest for 5 minutes before slicing or shredding.
  • Chop the tomatoes, bell peppers, onion, and avocado.
  • Mix the Greek yogurt, lime juice, and a pinch of cumin for the dressing.
  • Combine all ingredients in a bowl, toss with the dressing, and garnish with cilantro.

Notes

For a spicy kick, add jalapeños or chipotle powder. Serve with tortilla chips or in a taco shell for a fun twist!
