Instructions
Marinate the chicken by mixing cumin, paprika, chili powder, garlic powder, olive oil, and lime juice. Let sit for 30 minutes.
Grill or roast the chicken at 375°F (190°C) for 20-25 minutes until cooked through.
Let the chicken rest for 5 minutes before slicing or shredding.
Chop the tomatoes, bell peppers, onion, and avocado.
Mix the Greek yogurt, lime juice, and a pinch of cumin for the dressing.
Combine all ingredients in a bowl, toss with the dressing, and garnish with cilantro.
Notes
For a spicy kick, add jalapeños or chipotle powder. Serve with tortilla chips or in a taco shell for a fun twist!
