  • 1 cup fish (boneless, flaky white fish like cod or tilapia) cooked and shredded
  • 2 cups all-purpose flour
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 tbsp fresh orange zest
  • 1/4 cup fresh orange juice
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, beat the butter and sugar until smooth and fluffy.
  • Add the egg, orange zest, and orange juice. Mix until combined.
  • Sift the flour, baking powder, and salt into the wet ingredients. Stir until just combined.
  • Gently fold in the shredded fish, ensuring an even distribution.
  • Scoop tablespoon-sized portions onto the prepared baking sheet, spacing them an inch apart.
  • Bake for 12-15 minutes, or until the edges turn golden brown.
  • Let cool on a wire rack before serving. Enjoy!

Notes

For a twist, add a pinch of rosemary or thyme for extra flavor. You can also substitute the fish with jackfruit for a vegan version!
