Ingredients
  

Peach Filling

  • 6-7 medium fresh ripe peaches peeled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Crumble Topping

  • 1 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter cold, cut into small cubes
  • optional add-ins rolled oats, chopped almonds, pecans, nutmeg, ginger, or a splash of bourbon

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Peel and slice the peaches, then toss them in a mixing bowl with sugar, lemon juice, vanilla extract, and cinnamon. Mix gently and set aside.
  • In another bowl, combine flour and brown sugar. Cut in the cold butter using a pastry cutter or fork until the mixture forms coarse crumbs.
  • Spread the peach mixture evenly in a baking dish.
  • Sprinkle the crumble topping evenly over the peaches.
  • Bake for 35-40 minutes or until the topping is golden brown and the peaches are bubbling.
  • Let it cool slightly before serving. Enjoy warm with vanilla ice cream or whipped cream.

Notes

For extra crunch, add oats or chopped nuts to the crumble topping. If using frozen peaches, thaw and pat dry before using.
