  • 1 cup toasted pecans
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1 tsp vanilla extract
  • pinch of salt

Instructions
 

  • Prepare a baking sheet by lining it with parchment paper.
  • In a heavy-bottomed saucepan, combine granulated sugar, brown sugar, heavy cream, and butter over medium heat.
  • Stir constantly as the mixture begins to bubble.
  • Using a candy thermometer, cook the mixture until it reaches 235°F to 240°F (soft-ball stage).
  • Remove from heat and quickly stir in vanilla extract and toasted pecans.
  • Working quickly, drop spoonfuls of the mixture onto the prepared parchment paper.
  • Let cool for at least 20-30 minutes until the candy is set.

Notes

For a softer texture, cook to the lower end of the soft-ball stage. For a firmer candy, cook to the higher end. Store in an airtight container at room temperature for up to two weeks.
