skinless, diced

breadcrumbs

Coating

Instructions
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine diced salmon, beaten egg, breadcrumbs, garlic powder, paprika, salt, pepper, lemon zest, and parsley.
Mix the ingredients gently until well combined.
Form small bite-sized patties or balls with the mixture.
Coat each bite in panko breadcrumbs and place them on the baking sheet.
Lightly spray with cooking oil and bake for 15-20 minutes or until golden brown.
Serve hot with dipping sauce of choice.
Notes
For extra crispiness, broil for the last 2 minutes. Serve with tartar sauce, spicy mayo, or yogurt dip for added flavor.
