Ingredients
  

Salmon Mixture

  • 1 lb salmon fillet skinless, diced
  • 1 egg beaten
  • 1/2 cup breadcrumbs or almond flour for keto
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon zest
  • 2 tbsp parsley chopped

Coating

  • 1/2 cup panko breadcrumbs or crushed pork rinds for keto
  • cooking spray for baking

Instructions
 

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine diced salmon, beaten egg, breadcrumbs, garlic powder, paprika, salt, pepper, lemon zest, and parsley.
  • Mix the ingredients gently until well combined.
  • Form small bite-sized patties or balls with the mixture.
  • Coat each bite in panko breadcrumbs and place them on the baking sheet.
  • Lightly spray with cooking oil and bake for 15-20 minutes or until golden brown.
  • Serve hot with dipping sauce of choice.

Notes

For extra crispiness, broil for the last 2 minutes. Serve with tartar sauce, spicy mayo, or yogurt dip for added flavor.
