Shrimp Quesadilla Ingredients

cooked shrimp
seasoned with garlic powder, cumin, and chili powder

large flour tortillas

cup
shredded Monterey Jack cheese
1/2
cup
sautéed bell peppers and onions

tbsp
butter or olive oil
Instructions
Heat a skillet over medium heat and melt butter or oil.
Place a tortilla in the pan and sprinkle half of the cheese evenly over one side.
Add the cooked shrimp and sautéed veggies on top of the cheese.
Sprinkle the remaining cheese over the shrimp and veggies.
Fold the tortilla in half and press gently.
Cook for 2-3 minutes per side until golden brown and crispy.
Remove from heat, let cool for a minute, then slice and serve.
Notes
For a spicier version, add diced jalapeños or drizzle chipotle sauce inside before cooking.
