Ingredients
  

Shrimp Quesadilla Ingredients

  • 1 cup cooked shrimp seasoned with garlic powder, cumin, and chili powder
  • 2 large flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sautéed bell peppers and onions
  • 1 tbsp butter or olive oil

Instructions
 

  • Heat a skillet over medium heat and melt butter or oil.
  • Place a tortilla in the pan and sprinkle half of the cheese evenly over one side.
  • Add the cooked shrimp and sautéed veggies on top of the cheese.
  • Sprinkle the remaining cheese over the shrimp and veggies.
  • Fold the tortilla in half and press gently.
  • Cook for 2-3 minutes per side until golden brown and crispy.
  • Remove from heat, let cool for a minute, then slice and serve.

Notes

For a spicier version, add diced jalapeños or drizzle chipotle sauce inside before cooking.
