Ingredients
  

Cookie Dough

  • 2 1/2 cups all-purpose flour
  • 4 oz cream cheese softened
  • 1/2 cup butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3/4 cup fresh strawberries diced
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions
 

  • Cream the butter, cream cheese, granulated sugar, and brown sugar in a large mixing bowl. Beat until light and fluffy.
  • Add the egg and vanilla extract. Mix until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients, mixing on low speed until a dough forms.
  • Gently fold in the diced strawberries. Be careful not to overmix.
  • Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Using a cookie scoop, portion the dough into balls and place them 2 inches apart on the baking sheets.
  • Bake for 12-15 minutes, or until edges are lightly golden.
  • Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a cooling rack.

Notes

Chilling the dough helps prevent the cookies from spreading too much while baking. You can also add white chocolate chips for extra sweetness!
