Equipment

  • Blender
  • Fine Mesh Sieve

Ingredients

Strawberry Puree

  • 2 cups fresh strawberries hulled and rinsed
  • 1-2 tbsp sugar optional, adjust to taste
  • 1 tbsp lemon juice freshly squeezed

Instructions

  • Wash the strawberries thoroughly under cold water. Remove the green stems and pat them dry.
  • Slice the strawberries into halves or quarters, depending on their size.
  • Place the strawberries in a blender or food processor. Add sugar (if using) and lemon juice.
  • Blend until smooth. For a chunkier texture, pulse instead of blending fully.
  • For a super-smooth puree, strain the mixture using a fine mesh sieve to remove seeds.
  • Transfer to an airtight container and refrigerate for up to 5 days, or freeze for longer storage.

Notes

If your strawberries are not very sweet, consider adding a small amount of honey or maple syrup instead of sugar. You can also freeze the puree in ice cube trays for easy portioning.
