  • 2 tbsp olive oil
  • 1 large onion diced
  • 3-4 cloves garlic minced
  • 4 cups leafy greens chopped (spinach, kale, or collard greens)
  • 1 cup black-eyed peas or kidney beans cooked
  • 4 cups vegetable or chicken broth
  • salt and pepper to taste

Optional Ingredients

  • 1 cup smoked sausage, shrimp, or tofu sliced or cooked
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper for spice (optional)
  • 1 tbsp lemon juice for brightness

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Sauté diced onion and minced garlic for 2-3 minutes until fragrant.
  • Add chopped leafy greens and let them wilt slightly.
  • Stir in the beans, broth, salt, pepper, and optional spices or proteins.
  • Simmer for 20-30 minutes, stirring occasionally.
  • Finish with a squeeze of lemon juice for brightness and serve hot.

Notes

Feel free to experiment with different greens, beans, or proteins. Adding smoked paprika or cayenne pepper enhances the depth of flavor!
