Ingredients
  

Crepe Batter

  • 1 cup all-purpose flour sifted
  • 1 1/4 cups milk whole or alternative
  • 2 eggs large
  • 2 tbsp melted butter unsalted
  • 1 tbsp sugar
  • 1 tsp vanilla extract for flavor
  • 1/4 tsp salt

Instructions
 

  • In a mixing bowl, sift the flour and salt together.
  • In another bowl, whisk the eggs, milk, melted butter, sugar, and vanilla extract.
  • Gradually add the wet ingredients into the flour mixture while whisking continuously to form a smooth batter.
  • Let the batter rest for 30 minutes at room temperature for better texture.
  • Heat a non-stick skillet over medium heat and lightly grease it with butter.
  • Pour about 1/4 cup of batter into the skillet, tilting it in a circular motion to spread the batter thinly.
  • Cook for 60-90 seconds until the edges start to lift, then flip and cook for another 15-30 seconds.
  • Transfer to a plate and keep warm while repeating with the remaining batter.
  • Serve with your favorite toppings like Nutella, fruit, or whipped cream.

Notes

For extra flavor, try adding citrus zest, cocoa powder, or a splash of rum to the batter. Crepes can be stored in the fridge for 3 days or frozen for up to 2 months.
