Ingredients
  

Sweet Potato Waffles Batter

  • 1 cup mashed sweet potatoes
  • 1 1/2 cups all-purpose or oat flour
  • 2 eggs or flax eggs for vegan option
  • 1 cup milk regular, almond, or coconut
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • 2 tbsp melted butter or coconut oil
  • 1 tbsp maple syrup or honey optional

Instructions
 

  • Prepare the Sweet Potatoes – Peel, boil, and mash the sweet potatoes until smooth. Let them cool before adding to the batter.
  • Mix Dry Ingredients – In a large bowl, whisk together the flour, baking powder, cinnamon, and nutmeg.
  • Combine Wet Ingredients – In another bowl, mix the eggs, milk, vanilla, and melted butter. Stir in the mashed sweet potatoes.
  • Prepare the Batter – Slowly incorporate the dry ingredients into the wet ingredients, mixing gently until just combined. Avoid overmixing.
  • Preheat the Waffle Iron – Lightly grease it with butter or non-stick spray.
  • Cook the Waffles – Pour batter into the waffle iron and cook according to the manufacturer’s instructions (usually 3–5 minutes) until golden brown.
  • Serve Warm – Top with butter, syrup, or fresh fruit.

Notes

For extra crispy waffles, use cornstarch in the batter and let it rest for a few minutes before cooking. Enjoy with your favorite toppings like maple syrup, nuts, or yogurt!
