Instructions
 

  • Marinate the meat: Mix yogurt, minced garlic, and spices in a bowl. Coat the lamb (or chicken) thoroughly and let it rest for 30 minutes.
  • Rinse the rice under cold water until it runs clear. This step ensures fluffy grains.
  • Chop the onion and finely chop the fresh herbs for garnish.
  • Sear the meat: Heat oil in a deep skillet, then sear the marinated meat until golden brown. Remove and set aside.
  • Sauté aromatics: In the same pan, add onions and cook until caramelized. Add garlic and spices, stirring until fragrant.
  • Return the meat to the pan, add rice, and pour in water or broth. Bring to a boil, then simmer on low heat until the rice is tender.
  • Finish with herbs: Garnish with parsley, mint, and a squeeze of lemon juice for a burst of freshness.

Notes
